It can be a nightmare. That’s why we use gold-coated infrared lamps. Standard quartz tubes are okay, but they waste a lot of energy just heating up the air around them. The gold coating changes that. It acts like a mirror, reflecting the heat forward and pushing it straight onto your product. Instead of wasting energy warming up the oven walls, the heat goes exactly where it needs to.
