When you’re trying to get more product out the door, you usually hit a wall. That wall is almost always how fast your oven can actually get the heat into the dough. Standard convection ovens rely on hot air, and let’s be honest—air is slow. That’s where shortwave infrared (IR) lamps come in. We basically drop these into your existing steam ovens or add them to the line to blast the surface of the product. It tightens up your production rhythm and gets things moving. The secret to the speed Here’s the thing about IR: it doesn’t waste time heating up the air around the bread. It goes straight for the product. If you’re running a conveyor line, this means your crust sets almost instantly. By swapping out a standard heating element for a high-output quartz IR tube, you can often crank up your belt speed by 15% to 30%. And the best part? You aren’t leaving the centers raw. The nuts and bolts We use R7s or SK15 connectors because nobody has time for a complicated repair when a lamp goes out. These are built for quick swaps. Most of our tubes use a halogen-filled quartz envelope. This keeps the filament from evaporating, so your heat stays steady for thousands of hours. You don’t have to worry about the temperature dipping halfway through a shift. But a word of warning:watch your voltage. If you plug a 230V lamp into a 400V system, it’ll pop before you can blink. On the flip side, if you under-volt them, you lose that heat density and your line slows right back down. The trade-offs Now, more heat isn’t free. These lamps get incredibly hot. If you cram too many high-wattage tubes into a tight space, you might warp your oven chassis or fry your control electronics. You’ve got to make sure your ventilation can actually handle the extra heat in the room. Plus, you’ll need proper shielding. You don’t want the IR energy hitting your conveyor belt directly, or you’ll end up melting your belt right off the rollers.
